Because any 2 GoDs fighting would cause mass destruction. But that line was followed by Vados saying "such a fight would result in annihilation of both universes 6 and 7", so it was specifically referring to their fight. Also, Beerus is among the strongest GoDs by lore in the manga, even if it isn't clear cut in the anime.

The manga and the anime scale far differently from each other though, so that doesn't really mean anything for the scaling of Beerus and Champa in the anime. There isn't really anything in the anime that suggests there's massive gaps in power between the GoDs except maybe Beerus blowing away the Hakai ball from a casual Sidra.

Even Sidra's Supreme Kai said that he won't be able to handle Freeza so easily. The info we have only allows us to conclude that other GoDs are either on the same level as Beerus or below it. Unless other evidence presents itself in the future, we can't assume otherwise.

All that says is that Sidra is less powerful (and that's assuming his Kaioshin even knows his full power), that shouldn't apply to the nine other GoDs, that's an even bigger assumption.

It tells us that all GoDs are not equal. We also can't tell if any of them is stronger than Beerus because Beerus is the highest we've seen. And the only characters who are probably stronger than the highest we've seen in the ToP are UI Goku and FP Jiren. So it changes nothing in regards to Kefla or Vegeta.
