Josuke Higashikata vs Yang Xiao Long

Round 1: Speed Equalized, in character, around 10 meters away from each other.

Round 2: Both are hair-lusted, start around 10-20 meters away from each other.

Round 3: Same as Round 2 but speed is equalized.

Yang can't see the stand, so he can attack her without notixing. So Josuke takes all rounds.

Wasn't there something in the rules that states all Stands can be seen by everyone unless otherwise stated?

I think this might be a bit of a hard one to pin down, mostly because of Crazy Diamond and his ability. If I had to guess, Josuke would manage in all three rounds, because of the conventional durability bypass, and remaking of objects into a warped shape, right?

Josuke for all three rounds.

Round 1: Better AP and Dura via Crazy Diamond, fast enough to deflect any shots from Ember Celica. Range won't be a problem considering Josuke can use the pellets and shoot them back at Yang (like when he fought Keicho Nijimura's Bad Company). Not to mention he's smarter and more level-headed compared to Yang.

Round 2: Crazy Diamond destroys. Better AP and Dura rekt Yang who at that point will go H2H against Josuke, which is the worst thing she can do, and that's not counting the MASSIVE Speed difference. Crazy Diamond can also fuse Ember Celica together, making makeshift handcuffs to restrain Yang via Matter Manipulation.

Round 3: Same as Round 2, Speed won't be a factor here.

I can't see Death Battle making this match, Especially if the favors are on Josuke's side due to how biased Screw Attack is due to their half-hearted research and being bed buddies with RT. Unless they pull a Yang vs Tifa again.
