Well don't know. Probably via mind hax or something (since his AE form is Pure Will/thought). But if ultron couldn't interact IZ, AE type would be removed here as above

Ultron doesn’t have NPI tho and can’t interact with incorporeal beings as far as I’m concerned.

He can haxed them, even if he can't touch them, well IZ is not invisible nor is his ki blast. Ultron can dodge attacks or powernull/absorb them until he realizes he can't interact with IZ directly and starts with haxs. He has soul/mind hax so it should be fine Also, Isn't Thanos with IG interacted with spiritual pocket reality where gamora's soul resides?
But anyway, what is your vote?

Ultron hasn’t used soul/mind hax ever in what if. Im not sure about the pocket reality part

infinity stones powers are rated as universal+ range. seeing how his punched can basically reality warp an entire universe. he can simply reality warp IZ from existence. if AE is restricted.
Purely soul entities are considered Incorporeal already and soul stone covers that
