Against Deidara the first time he used Genjutsu was when he was pressured by Deidara's C4 somewhere in the middle of their fight, he used it to perform a sneak attack.

The second time he used Genjutsu on Deidara was to get close to him and to perform another sneak attack, and that was near the end of their fight.

In his fight with Itachi, Sasuke uses his genjutsu heavily in opening. Probably because he treats Itachi as a much bigger threat than he does Deidara. Sasuke probably won't open with genjutsu and instead with some variation of chidori since he probably won't take Natsu too seriously when they first meet
