i still think things dont change very much.. gaara still has a MASSIVE aoe advantage and even with future sight, I'm not sure how much that's actually even going to help him.
i think invisibility is sanji's only wincon. But who isn't to say that Gaara just hides in his sand (kind of like he did with Sasuke), until Sanji shows himself?

You said nothing to debunk the point other than "Gaara can't use it if Sanji stays in the air, since he can't use it on airborne opponents." ; which is flat out wrong. As displayed below.

He's not being touched by giant waves of sand spanning an entire battlefield? Miss me; future sight isn't suddenly some kind of giant speed amp which lets him dodge for hundreds of meters.

Kenbunshoku Haki has allowed users to react to shit whenever they can't track other characters from their eyesight. Doffy was able to use his Kenbunshoku to predict Luffy's attack last second, the latter being able to blitz Doffy from hundreds of meters.
Also don't think Gaara can suspend sand in the air for large amounts of time, which isn't exactly a good idea given that he's dealing with an opponent who can see events happening several seconds before they happen along with speed boosters.

I am aware that the sand protects Gaara from attacks regardless of his will, but how would it protect him from someone who can increase his attack speed and then increase it again with another techenique? This is like Rock Lee case, when many attacks at consecutive high speeds would be difficult to keep up with even Instinctive Reactions. The difference is that here Sanji can see the future and know where the sand will defend his opponent.
Gaara's advantage in range is not so important, as Sanji has a better flight and can see seconds in the future to anticipate any strike over long distances.
It would be very difficult for Gaara to catch Sanji in his sand due to the flight, not to mention that the guy has enough stamina to stay in the battle for whole days.
By Sanji's fighting skills, a single sequence of his black leg style would be enough to blind Gaara or cause a lot of damage to his face (This is because Sanji's fighting style is focused on hitting fragile parts of the human body, such as his eyes, throat, chin, teeth. Sanji is so skilled at hitting the vital points of the human face that he literally alters the bone and biological structure of the target's face with kicks).
For Precog, Skills and Speed my vote goes to Sanji.
