Probably Whitebeard cause he is stronger.

whitebeard is stronger but if he is no fast finishing off Escanor, his sickness wil drain his stamina while the other will only get stronger and eventually overpower him. So I guess it depends if they are bloodlusted or not, bloodlusted whitebear wins, non-bloodlusted wouldn't go full-power from the beginning and eventually lose.

I would say this is inconclusive since Escanor's AP is 6-C+ which Whitebeard can take, and Whitebeard's AP is High 6-C, which Escanor can also take because his 6-C+ strike was doubled in strength then sent back at him and he took little damage from it (this is assuming we're talking about late-morning Escanor here which I think 11AM can be considered to be).
EDIT: Does Whitebeard have protection against Escanor's Cruel Sun and intense body heat radiation at that time of day? Assuming Cruel Sun scales to our Sun, it has a surface heat of 5,600C, and even assuming it doesn't it still managed to evaporate all of the contents of a lake large enough to warrant named shores in "a blink of an eye."
