AP will be a huge problem here.
Sagat greatly upscales from Adon's casual 0.04 feat, but Doomfist scales from his own casual 0.23, and the difference between the two feats is about 6 times.

Doofist has about 8 or 9 martial arts he's mastered, how many has Sagat mastered?

That has very little meaning when the AP gap is so large and Sagat doesn't really have anything to get around that.

True, Muay Thai definitely likes having an AP advantage...

Numbers aren't everything, against a highly comprehensive fighting style like Muay Thai, a master of that many martial arts would still be likely to have a largely even fight skill-wise with someone with a zeroed-in complete mastery of Muay Thai, save likely for an advantage in ground-and-pound or grounded submission.
In short, quality of martial art mastered and the degree of mastery > number of martial arts mastered
In Doomfist's defense, though, his profile/bio seems to suggest he's extensively trained in competition-level MMA

Just as Saman said, skills mean very little when it come to higher AP, especially since Doomfist AP are borderline one-shot. Pretty much a slap or two would be enough to knock Sagat out.

Oh I already fixed scalings. Especially since Doom is doesn't need something to fix, as he's the one who performed feat.
