In theory, Data-Sora could just block Dabura's Stone Spit with his Keyblade -or Dodge Roll- to avoid it. Would his Keyblade work if petrified? Maybe. But it would probably come back.
The original, digital version of it he had was made only of Data, and got destroyed by Maleficent. The Keyblade he got was a "true" Keyblade, created from his own strength of heart.
IIRC, in the Birth by Sleep miniature movie/FMV cutscene depicting the Terra, Ventus & Aqua vs Xehanort, Ventus's own Keyblade gets part of it broken off when Ventus is frozen solid and dropped off a cliff. When he fights Vanitas shortly after, his Keyblade is back to normal.

So it seems likely that if Data-Sora's Keyblade were petrified &/or destroyed from blocking Stone Spit, it could go back to normal. That also supposes it WOULDN'T work while petrified, despite being a magical weapon that can reappear in the user's hand at will & Keyblades seemingly being a manifestation of the user's heart, or strength of heart.
With that in mind, supposing it does work while petrified, Esuna MIGHT be able to cure it. It's a cure-all for Status Effects, although, AFAIK, Petrification isn't a status effect in KH. But KH is a crossover involving Final Fantasy/Square works, several of which have Petrification as a status effect, so I'd assume Esuna might be able to cure it.
Anyway, in terms of actual fighting, Dabura's smarter, both of them are pretty skilled -although, we've seen Data-Sora fight a much greater variety of opponents than Dabura, IMHO.- & seem matched in Stamina.
Dabura does have Flight, but Data-Sora has Healing, and can also hinder Dabura with Gravity Manipulation and Time Stop.
In terms of range, Dabura is apparently stellar range with his ki attacks, to Sora's planetary with his magic. But both seem like they wouldn't bother trying to get out of each other's range. Or at least, if they did, both have ways to get around it.
So, without knowing their exact AP/Durability values....
I'm gonna vote Data-Sora, Medium-High Difficulty, for Time Stop, Gravity Manipulation, Healing, & greater variety of skill in combat shown, & Stone Spit being countered by dodging (As well as probably Air, Earth & Gravity Manipulation.), as well as by blocking it with the Keyblade, as the nature of it seems like it means petrification wouldn't be that long-lasting/effective on it, & Sora probably wouldn't let it hit him. (Also, if he does get hit, he may be able to Esuna himself before the effect finishes.).
