Shouldn't Link G&W be included in Composite G&W? Is there something I'm missing here?

Yes.
Though since it's only one game maybe it should be something like
High 8-C. Higher with Numbers Pad. High 5-A with LoZ equiptment. 4-B with Triforce.

I always wondered why we didn't include link in the Mr. Game and watch composite, despite this note being on links page:
Note that in later references to the Game & Watch games, every protagonist has been seemingly retconned to be Mr. Game & Watch, even when the protagonist was another character originally.
Which would imply that he would be part of a composite Game and watch.

The only issue back then was whether or not the G&W Link could be scaled to the LoZ triforce. Yet for some reasons, it resulted in Link just not being part of the profile instead of Link being downgraded, which makes no sense.
But yeah, considering that even actual characters like Mario and Donkey Kong Jr. are just part of G&W too, Link should be included in Composite G&W.
