However, Grey Goo seems to have far better Absorption since he can literally absorb the universe

Weekly's right. Grey Goo also isn't biological, so The Thing can't even really do anything other than try to hit it while it's small, which is just gonna slow it down at worst.

Even if the Thing flees to the ends of the earth trying to esscape the Goo it would only take a few minutes at worst for the Goo to grow large enough to eat the entire planet
