Onslaught in the 4-B deserves the place. With this theme (there's the three of them) you can actually feel that this is a final boss (and a harder one -I played MvC in arcades when I was 10yo-). At the beginning you can feel that this is going to be a mess to defeat this guy; 0:34 show us that the fight is somehow unfair; then at 2:07 is a theme for "THIS! IS MY TRUE FORM!"
