Also, looking at the profile, I don't see her being able to regen her Soul, just her physical body from her Anodite state.

I don't actually see it listed on her resistances, could you point it out? But even so, I don't quite see her being able to resist all the effects from Ichigo's Reiatsu.

Those go from crushing one's soul by just existing near them to being able to fear hax them, pin down them or destroy them via AP. Also, by being a Hollow, Ichigo also has Soul Corruption which can cause one's soul to die.

Beyond Sauce Crush, Ichigo also has passive Corruption Type 2 which causes death manip, poison manip, and power reduction. Gwen is getting passively cooked

Gwen can using Mana field. Gwen can send Ichigo to another universe. Seal Ichigo and nullify his abilities and powers. Gwen's aura can amp him.

It's all passive and it reaches up to universal. Gwen is getting corrupted and soul haxxed before she gets the chance to powernull him
