On top of having a far superior ranged game, she has a much better skill set and ways to stop Saber from getting close, not too mention his NP is ultimately dodgeable

How far away are they starting? If they're close enough, Gilles might be able to pull through with his superior physicality, but if there's any distance then Atalanta wins. She's agile and fast enough to increase her distance advantage, and even his NP won't buff him enough to reach her.
