So, Sauron is listed with Island level + durability because it was required destruction of an island to kill his physical form.
Now, from what I remember from the Silmarillion, Numenor was destroyed by a giant wave, then it fell in a giant pit. The island was destroyed, but how does that mean that Sauron got hit by an Island level attack? He was basically human sized, and the part of the attack that hit him wouldn't be nearly as destructive as the entire force of the attack.
And, even if he was hit by an island level attack, that doesn't mean it's the minimun you need to kill him. It could have been an overkill.
