To put some stuff for Escoffier, she's very stingy about the flavor of food. In Sigwinee's About Escoffier: "Miss Escoffier wasn't in the Fortress long, but she was a delightful presence! Whenever I made her a beverage, she would get so serious, taking these small, careful sips, it took her forever to finish! And then, she would go into a bunch of detail about the flavor profile... A lot of it went over my head, but the way her face would contort in response to the flavor was so cute! I should send her some milkshakes for old time's sake!"
Varesa says this: "Miss Escoffier has really strict standards... Every time her restaurant places a bulk order for my fruit, she picks out a few for... what's it called... yeah, "sample analysis." If the sweetness or flavor is even slightly off, she rejects the whole batch... But then again, her cooking? Out of this world. Sooo delicious... Hehehe... If only I could eat it every day! I guess I'd probably have to be a god to afford that."
And Xiangling, a chef from Liyue whose culinary skills are those of a kitchen veteran, says this: "Oh! You mean that chef from Fontaine, right? She's great! I got to try a bunch of her new dishes the other day. They were all so... what's the word... precise! It was like she took all the flavors and ingredients in her dishes and transformed them into art! I was amazed at how meticulous everything was — every measurement, every technique executed to perfection! I kinda want Shenhe to ask Aunty Xianyun to make me a precision cooking machine of my own, so I can try out Escoffier's style of cooking!"
She even pulled an all-nighter to think, having baked several cakes during that time. Her character trailer also shows her culinary skills in a better light.

That's very close to what Escoffier did at the Hotel Debord with Gateau Debord, and the one they currently sell is her reimagined version. She's also hailed renowned head chef in the Hotel Debord's history after the culinary genius Modeste himself, who's hailed as a once-in-a-generation genius. Escoffier was also able to notice what was wrong with some cooking equipment right away, in one night. Granted, it took Escoffier three years to perfect the Gateau Debord.
Escoffier's Knife Skills are great as well as stated in her Chat: Knife Skills: An important part of cooking is making sure the ingredients absorb the flavors in the dish. To that end, a chef must be able to wield a knife with the same level of precision as a surgeon. Practice makes perfect.

This is nothing compared to Sanji's feat(s).
Also nothing compared to Sanji's feats. He's literally able to reform facial reconstruction surgery on people with his legs based solely on his anatomical/culinary knowledge.

Sanji makes a highly nutritious, energizing, and delicious meal with dogshit spoiled leftovers
Sanji can pseudo mind control/nearly kill people with his food, and has VASTLY more knowledge about different cuisines
Not to mention, Sanji's cooking is so good he can give people stat amps from the flavor alone (Attack Cuisine)
