Well, yesterday Chapter 79 of Saint Seiya Episode G: Assassin came out.
And in it there was an interesting feat:
It was recently revealed that in the past there was a Great Final War between Athena's Saints and the King of the God Zeus in a parallel timeline (Long story, don't ask).
Anyway, it is revealed that Zeus was destroyed in body and Saint by the combined sacrifice of likely the Saints and Athena. However, Aiolos is perfectly aware that Zeus is immortal and cannot die:
"The lament of my heart transformed itself into strength and all my feelings were placed in the arrow. Without any doubt, I was capable of piercing the Great God Zeus. Not just his body, but also his spirit, were destroyed. Although it is impossible to kill a God, Zeus shall fall into deep sleep. The war has reached its end."
This is pretty explicit stuff.
However, Zeus doesn't fall into sleep. Because his mortal host is still alive on Earth, he is able to possess his body and still act, even though his body and soul were destroyed. His host is Leo Aiolia, by the way (Also another long story that according to Megumu Okada's twitter was planned since 2003).
"You have been born solely for the advent of the Great God Zeus to Earth. You are the host of a God. The only one that stands here is I, Zeus. Your little brother has disappeared forever."
Anyway, but Aiolos manages to awaken the 9th Sense and kills Zeus in Aiolia's body.
"Fool! I am a God! I won't die as if I were a human being, but merely fall into deep sleep! However, you cannot say the same of you, Aiolia!"
Assassin also recently revealed that Hades is perfectly alive in the future despite having been killed in body and soul by Athena at the end of Classic Saint Seiya, so this scales to other gods and is not an ability exclusive to Zeus.
Okay, so why are Gods unable to be permanently killed? I think I have an answer, it is in Saintia Sho:
"You may have destroyed me... But, for as long as conflicts exist... Without a shadow of a doubt... The battlefields, the smell of blood... Will allow me to return once more."
So Eris, the Goddess of Discord, explicitly says that she cannot be killed as long as there is conflict remaining. This implies that in Saint Seiya Gods are manifestations of the concept / thing they rule over, and cannot die for as long as that remains. I was always uncertain to apply this to all the gods, but with the Episode G Assassin chapter that just came out, the two information make a lot of sense together.

So to sum it all up:
- Saint Seiya gods can regenerate from having their body and soul destroyed
- If a god doesn't have his Mortal Body, His Soul, and his Human Host all destroyed, he'll be capable of quickly returning
- If all three are destroyed, he will just fall into deep sleep and return (Which should take a few decades considering how Hades seems to be alive and well in Assassin, which takes place about 16 - 24 years after Classic)
- A god will never fully die as long as the concept / thing they embody remains.
