Ulthane is a Smith first Warrior second individual, while Thane is a pure warrior-class Maker who was hunting something nastier than Griever in the giant lightning spider known as Achidna.

Should note Thane has gray hairs while Ulthane doesn't, so he's probably older and more experienced(And also fought the nastier opponent in DS2 Death, even if he lost).

Basically, Ulthane is a bit less skilled and experienced so he loses.
