Time skip vs time stop

I mean… can he see his death in order to skip it, if he dies in stopped time?

Yes, he won't see what happens in time stop but he'll see jotaro teleporting around and watch himself combust into a pile of limbs so he'll just ctrl Z that.

I don’t think it works like that. He can’t just undo what he sees, what he sees happens, and KC allows him to change what he does so it doesn’t.
However, he can’t really do anything in stopped time to prevent his demise, can he?
We’ve had matches of Jotaro/DIO vs Diavolo before, they’ve ended up as Incon because it’s essentially who shoots first. Does Diavolo activate KC before TS or is he killed in TS before he can erase it.

Yes he can, his ability is to literally just exclude himself from all the events that happen in the next 10 seconds. Yes it's true that whoever activates their ability first wins, but it's always going to be diavolo due to epitaph.

Diavolo erases the time itself in which Jotaro would attempt to stop: Yes, indeed: The forecast esque images in erased time will show Jotaro standing in one spot for the next few seconds (Him doing the time stop command) and then re-appearing somewhere else. Jotaro In-Character does not stop time immediately either, so the "whoever draws their gun first" doesnt work quite well as you'd expect.
