It's all guesswork, but the bottom line is that Frisk isn't checking out a dictionary, but instead just trying to gauge how much pain they can take and dish out.

I've also heard a theory that Undyne's armor is designed to protect against magical attacks, whereas physical ones go right through, but when she's at her house later during the rematch she has ten defense and ten attack due to her determination and ability to move around enough that she can take it.
