It says he is the second strongest character in the series, surpassed only by the ashen one. But the Ashen One needs to hit him a lot to kill him, while the SoC can kill Ashen One in about 6 hits. Shouldn't SoC be stated as strongest?
 
The amount of hits require to kill bosses in Dark Souls is gameplay mechanics.

By this logic, any video game boss is stronger than your player character because they kill you in fewer hits than it takes to kill them, which is especially erroneous to apply to Dark Souls because the series is supposed to be really hard.
 
Well at the time you fight them, yes any boss is stronger than you (unless it is meant to be a joke boss or show you how powerful you are *cough Mettaton cough*) becase it is meant to be a challenge.

The Dark Souls games have always been about this one pitiful character forcing their way through a world stacked against them, and that's not just gameplay, its a major theme of the game, triumphing over the odds despite being placed against beings stronger than you.

We could also think of it like Chara's fight agaisnt Undyne the Undying. Undyne can kill Chara easily in a few hits, but eventually Chara wins simply by virtue of SAVE/LOAD allowing her to come back as many times as she wants until she knows exactly what to do. The Ashen One is doing the same thing, fighting and dying over and over until he knows SoC's attacks and can dodge them instinctively.
 
Thing is I'm not sure how canon reviving against bosses is, since it resets them to their first phase even when that shouldn't be possible (Primarily looking at the Nameless King, the Curse-Rotted Greatwood, Ornstein and Smough, and Iudex Gundyr).

time and space are convoluted in dark souls, so almost anything could happen

Boss reset canonicity is questionable, but reviving and using your acquired knowledge from getting your teeth stomped out repeatedly is all but unquestionably canon
 
It is game mechanic.And also you can create one shot builds with all required stats maxed out.Dont forget that in game you deal a lot more damage then any boss.You can deal 1000 with great sword charged attack(for example an embered character with 35 health has about 1600 health) while boss with his attack deal only 500-600 and about 1000 only with strongest attacks.
