I can definitely see Mumbo and Sans getting along well. Even if Mumbo would get called a bonehead a lot, but he got that from Kazooie anyway.
Grunty has two openings. She can start with her time-travel hax, which she'll either use as a BFR or as a paradox/prep time method. Both of these will result in a loss for Sans as they're both thought based.
She can also start out with AP. She abuses flight, forcefields, invisibility and invulnerability while firing off homing attacks. This'll be a closer fight, since her AoE of her attacks is small, and she doesn't exactly have danmaku. From what I've seen in other threads, Sans can't bypass forcefields and the like with his durability negation shtick, so that'll be a big problem for him. His gravity manipulation also won't work. However, if he does get past that forcefield, he'd still need to see her due to invisibility, or at least have a good idea where she is, while avoiding homing attacks no less.
Sans auto-loses in scenario 1 and has a bad time in scenario 2. Grunty also has other ways to auto-win, like her plot manip or her transmutation, but she doesn't use either in-character (at least not off the bat)
Gruntilda can plot manip you (Banjo & Kazooie) out of existence if you cheat. At least, that's what I think destroying a save file + getting a game over would be. But yeah, she'd never use it unless bloodlusted or something.
Rare made the best games back then. Shame Yooka-Laylee didn't have that same feel to it.
Speaking of DK64, they used the game over screen from that as K Rool's final smash in the new smash bros. No excuse not to put Banjo in as DLC, make it happen Sakurai lol
