Palpatine has Precognition so he wil see the attack incoming and react to it in time, he can telekinetically stop the blades in mid-air, he can redirect them with the force, or cut them with his Lightsaber.

I came to the conclusion that Palpatine basically got this via various things first of all Mind Manipulation, he can trick her into giving up or make her stab herself with her own blades. He can also absorb the life force of Hela and empower himself with it.
