If Jack has his pistol, he will win because Inigo surpasses him in skill. He will just say "screw this" and shoot Inigo.
If Jack only has his sword, Inigo will win after a decently long fight, he managed to kill 3 highly trained guards at the same time with ease. Jack´s saber is better for combat, but Inigo has a lot of skill with his rapier.

well i didn't think about jack's pistol as an option, but regardless i have to agree, inigo always seemed very skilled with his sword, i thought jack's creativity will make him an equal opponent for inigo though.
