Ultra Instinct shouldn't provide any protection against mental attacks. It's not that you're not thinking, it's just that you're not thinking consciously; your mind is still going subconsciously and extremely quickly, processing everything thrown at you and responding as it happens. Goku's conscious thoughts actually disturb Ultra Instinct, so why wouldn't powerful enough mind manipulation be able to force him out of it?
