Stand Descriptions are accurate though. The whole point of them is, as said by Araki, is to give a clear cut idea of what the Stand can do and what its power is. It's the A-B-C scaling we don't use, not the actual descriptions, we use those all the time for plenty of profiles (And even then, the A-B-C stats we use as well, as long as the stats are unique or specific, like how C-Moon's range is listed as 3km instead of something vague like an A, as it's specific there's no misunderstand hence why we can use it).
Plus the main issue with the ABC stats isnt that it isnt accurate, it's that the stats may not mean what you think they do. For example, Star Platinum has an E in one stat by the end of Part 6, in Staying, but the E isnt for durability, it's for the fact Time Stop only lasts a small amount of time and needs a cool down, hence why it's only an E. Or Whitesnake having a D in speed, you'd think it's talking about how fast it can react and punch but no, it's been confirned the speed is talking about how fast it's acid can melt foes and it's actual speed is explicitly stated to be around Stone Free's speed. Or Purple Haze, it has an A in power but it's not talking abot strength, it's talking about how destructive the virus is to others. That's the main issue with Stand Stats, not they arent accurate but rather we dont know what the hell it's talking about most of the time so it cant be used due to being vague. The Stand Descriptions dont have that issue, they're blatant and meant to be taken literally.

As said above, it's precision could mean many things, it could be talking about how Hol Horse himself has to manualy control the bullets himself and as such the Stand has an E because it doesnt do anything, it has no precision essentially because Hol has to move it and change trajectory. We dont use em because theyre vague.

Josuke in the same exact sentence says he never actually tested it and is just guessing, it's a running gag as well, with Josuke trying to say something that sounds tough but really isnt. His 300km+ line is meant to be taken as failed tough line and not taken seriously (especially given CD prior to and in his immediate next debut, has feats dozens to hundreds of times faster than 300km. If CD was only 300km he wouldnt even be able to deflect a bullet, yet we've seen him deflect tens of thousands of bullets before at once and in the next arc, he plucks a bullet out of the air without even trying). Star Platinum being FTL is confirmed by multiple things, not just his bio. He's stated to be the fastest Stand in history in Part 4, that includes the lightspeed Hanged Man and the lightspeed RHCP of course so he's already FTL via virtue of being faster than lightspeed Stands, but he has lightspeed feats.

The **** does that have to do with anything? TWOH can overwrite anything in reality but it sure as hell aint overwriting the Anti-Monitor. As far as jojo is concerned, yeah, Killer Queen can bypass any defense, it's true in the context of the setting.

You listed zero fallacies. The only fallacy here is the fallacies you're making. Stand Stats aren't Stand Descriptions, just because one thing is faulty doesn't mean the thing that is meant to be taken at face value, directly with the sole purpose to exaplain the power is faulty as well, especially when 90% of the time the things in the descriptions are outright shown to be true.
GER has willpower manipulation, the issue is we dont know how it's used in canon. We know how he uses it outside of canon (it's basically what it sounds like, he can make someone not wanna do something) but in canon, while he is said to have we never see it so as per the last thread about this subject, he's allowed to have it listed but users should refrain from using it in vs matches because while it exists and while he's said to have it, we dont know how it functions in canon.
