The Gaping Dragon has higher LS but the Skullcrawler is smarter, more skilled and has slightly higher AP so I'd probably side with it.
 
There's also a dude buffing the Dragon and taking potshots at the Skullcrawler nearby since this is taking part in the Dragon's Arena.

So how strong is that dude? Is there anything stopping the Skullcrawler from smacking him aside with his tail? How much is he buffing the Gaping Dragon?

From what I have read on the Dark Souls Wiki, his regular attacks are strong enough to be a mild inconvenience to the Chosen Undead, mostly staggering them when they're about to attack the Dragon or avoid its attacks. He's located several floors above the arena out of the Dragon's reach without flight or acid spit and will be spamming Soul Arrows. His War Dance buffs the AP of himself and his allies to almost 2x their original amount. He can also teleport to avoid damage.

Yeah, he himself is pretty weak even with the buff. If the Skullcrawler gets to him, which it should be able to do thank to its agility, then he's kind of screwed because his teleportation has a noticeable wind up time.

The wiki says that he's invulnerable while preparing to teleport.
 
Not sure if the Dragon's match with the Delver should be removed because the Channeler wasn't brought into the picture yet.
 
My vote still goes for the Skullcrawler, anyway.

Before the Gaping Dragon gets buffed enough to be an issue, the Skullcrawler will either likely notice the opponent getting stronger or get annoyed with the fly hitting it with little spikes, climbing up to where he is shouldn't be an issue and if he can still be hit that means his teleportation isn't instantaneous and anyone fast, mobile or agile enough (the Skullcrawlers are all three) can strike them down or bury them in rubble if the Skullcrawler decides "screw it, I'll just destroy the arena to get them".

The Skullcrawler will still have an advantage in skill and intelligence (also size, thus range) over the mouthy animal to finish it off, albeit with some extra difficulty should it actually reach the Skullcrawler's level of AP.
