Could Mahoraga adapt to opponents where he can’t win against them physically? For example gambling stands from JOJO’s or other similar abilities where you have to use wits to win.

Makes sense but if that’s the case, why didn’t he adapt agains an opponent who could one shot him (Sukuna)? If he was smarter and had more battle IQ, he’d realize that he would die if he didn’t change his strategy. Plus, I don’t think he’s that powerful, because then he could’ve easily defeated Sukuna by for example starting to negate all damage. Or he could’ve done something similar to what he did towards Gojo’s infinity by maybe bypassing space so Sukuna couldn’t hit him.Probably considering he can adapt to any and all phenoma as stated verbatim in the series as long as it doesn't immediately kill him. A good example of a non-physical thing he adapted to was Infinity by just bypassing space entirely with his attacks.
He was adapting, the weakness to his power js that he cant adapt to an attack that legitimately kills him in one go.Makes sense but if that’s the case, why didn’t he adapt agains an opponent who could one shot him (Sukuna)?
He can't choose how his adaptations manifest and Mahoraga actually does adapt in raw skill as the fight goes on, at least in the Blu-ray anime version. In the manga it's shown his intelligence actually improved after Sukuna tamed him.If he was smarter and had more battle IQ, he’d realize that he would die if he didn’t change his strategy.
