Chris Redfield vs Hank Hill

I wouldn't quite say that, they're both military trained (though Chris quite a bit more so) and Hank is on the level of a professional fighter, having trained Luanne to fight evenly with Freeda Foreman, who was the best boxer in Texas (profile doesn't specify, so I'm not sure if this is referring to just women's boxing or boxing as a whole) and was also genetically predisposed to be good at said sport. Chris certainly outgrapples, but Hank could probably keep up with his boxing skill.
 
Chris has cleared out entire facilities flooded with zombies and taken out opponents who were physically superior to him and possibly equally skilled (see Alex Wesker’s mutated form).

Hanks statements don’t even seem that impressive. Especially when Chris has outmaneuvered milita trained to deal with more deadly creatures
 
Zombies and critters ain't that impressive, since there isn't much going on in their grey matter for them to be a very viable hand-to-hand threat against someone sufficiently trained, especially if that someone can AP stomp them as with Chris and most zombies. The Wesker bit is a very good point though
