Cheetah vs American Pitbull

Are they "in character"?

I vote Pit 7/10 times, as much as it pains me to say this (Cheetahs are one of my favorite animals).

Cheetahs really aren't much of a fighting animal. They're highly specialized for chasing and killing prey, but they're not very confrontational. The pit is more of a fighter than the cheetah. The cheetah would likely attempt to run away, but speed is equalized, so that takes its only chance of an inconclusion out of this.

Yes there are. Outlier means something statistically unusual. The term "outlier" wasn't coined for the sake of fictional discussion. It has a more general meaning.

What advantage cheetah has now ?
 
Cheetahs are not meant for fighting, unless they're desperate they'll always go for small, agile prey. Their bones are frail, their claws are not sharp, and their bite force isn't great. Pit Bull takes this.
 
No, weight IS important in animal matches. But the Cheetah is an exception, they aren't very strong because they're built for speed and that's it, which might mean the Pit can have a chance.
