That the databooks are not reliable, to my understanding.

Could you or anyone link the reason why? I've never heard this about Bleach databook.

In manga he says its 500x.

And Gin is not considered a reliable source

Also, the Bankai does seem to extend at x500 Gin's hand speed, but only when it goes for 13 km
