About profile categories

If a profile has an ability listed (i.e. regeneration,) but doesn't have the category for said ability, am I allowed to edit the profile to add the categories?

Well, good question i think you can, just need to say in the summary of edition what you added

But better wait for more aswner from other people

Yeah, you can add Category and do minor edits like fixing grammar and words as long as it's a minor edit you can do it, but yeah as Oliver said do mention what u editing in summary.
