Baby bats vs. saplings

So while both are extremely tolerant to pain and both are plentiful in stamina, I'm gonna go with Daniel here for two reasons:
  1. Durability wise, Daniel exceeds Ethan's attack potency, as he was able to endure consistent attacks from Armitage, Bullseye, Sean, and Benedict all at once. While this can also be said by Ethan's durability, I'd disagree as, unlike Gretel, Ethan isn't tanking or enduring anything from his abusers' attacks or weapons, and we see him literally moments after disembodied by Ayden.
  2. While he does have Average everything, he still was trained by the military camp and likely has some experience with Hand-To-Hand Combat, if not something more than Ethan's combat intelligence.

In my opinion, Ethan has a higher chance of winning. Although he's just a gardener, his strength shouldn't be underestimated. He has a significant advantage in LS, and his Stamina is a notch higher than Gretel's. With his superhuman willpower, Ethan is unlikely to be defeated by Gretel in a few blows. Gretel's have received military training, but he's never been seen to fight back against bullies without a shotgun. Meanwhile, while Ethan might be inferior in battle IQ, he's not easily intimidated Because he had been shown to be willing to fight back against Ayden, even though he ultimately died, he at least surpassed Gretel in this respect. Furthermore, the setting is a mangrove forest, and his proximity to the area gives him an advantage as it's his home turf.
However, Gretel is still very dangerous due to her training, so I might change my mind later. But for now, I'll vote for Ethan.
