If he gets in grappling distance it's also possible for Bowser to nail him with fire at point-blank range once he notices the LS and skill diff

He has a running start here and the jump isn't that high
He's running here as well and also using stuff mid air as leverage so I wouldn't call that higher jumping

I believe that you forgot, that Po's attacks are getting no-sold here. Wushi finger is literally the only way he can do things to Bowser.

Lemon. Let me ask you something. How big do you think Po is? Because if he's anything but ten feet tall in your eyes(probably more TBH) then he's never Wushi Finger holding Bowser from behind.
Also that doesn't work, Bowser just uses the momentum from trying to get onto his feet.
