At the start of The Makai Tournament, Yusuke punches demons so hard, they get sent into space, but when they reach it, they illuminate light as if they were a star; could this feat even be calced (the illumination energy of stars)?

Not quite in the way you're thinking. The demons aren't actually emitting light like stars—the 'twinkle' effect is a common method used in anime and manga (as well as other media) to show that someone was launched an absurd distance, far enough to be out of sight. It's more of a stylistic exaggeration than a literal display of energy output.
A better way to calc this feat would be to determine a reliable timeframe and use the speed derived to find Kinetic Energy.
