I mean, actually killing Milagro Man or the person carrying it doesn't stop its curse.

Not necessarily. It can also crush people under the sheer weight of the accumulated money. It would hurt a Servant the same way an enchanted brick thrown at it would. While a Servant can go intangible, he won't stay that way forever, and when he does leave intangibility, there's a mountain of cash waiting to crush him which can be teleported in by MM.

Yeah but it's main method of killing is via asphyxiation. How is physical money going to deal with a servent?
They also often kill via starvation, but that wouldn't be applicable against a servant, as far as I know

The money doesn't accumulate that fast unless you destroy it. If Saber has anyway to put down Milagro man she likely does it before it accumulates enough to do any serious damage and proceeds to go intangible to deal with the curse.

Well, Milagro Man is a bound stand as well if I recall correctly. It isn't a stomp since there is the low chance they manage to pass the curse off, but otherwise, how will she put down Milagro Man?

Yeah I'm not to sure. If she doesn't have NPI she probably has no way to put him down in the first place. Isn't this a stomp in that case?

MM is a bound stand anyway, so having NPI wouldn't let you put it down regardless. Also, nah, it's not a stomp because they have the win condition of passing the curse, but it's unlikely enough that MM still wins
