Joel wins. He is far more skilled and tough, not to mention that he's extremely good at stealth, maybe even more than his opponent. Even if he can't take Yandere-chan by surprise he can easily overpower her in a 1 vs 1 fight.

Joel is waaay more experienced, he's been surviving for 20 years fighting the infected so he's no stranger to melee combat since he's fighting something that will try to get a bite out of him on daily basis, and he can use the environment well so yeah. Going with Joel here.
 
Yandere-chan is literally a normal person, mostly. The only reason she's powerful is because of prep time and ambushes. Best I can say is that she at least has martial arts but that's not enough to bridge the experience gap. Voting Joel.
