Let's say I was turned into a jelly statue then change myself back to my normal human body with bones, blood and my organs back. Is this Body Control on a Cellular, Molecular or Atomic level?.

I would guess molecular since I don't think just controlling cells would allow you to turn jelly back into a human body.
Tho are you sure it's body control and not something else like transformation or some kind of transmutation negation or whatever?
