His regen makes it hard for him to be killed and Demogorgon is really lacking in intelligence.

I will throw the Demogorgon a bone. I do not think Cassidy has any resistance or defenses against psionic powers such as telekinesis. From what we can gather, dimensional travel, which the Demogorgan can do, takes more energy than all of humanity can produce stated by Dr. Clarke. Since the Demogorgon has access to dimensional travel in canon, it is quite likely the Demogorgon will use its psionic powers on Cassidy to do things that Eleven has been shown to do, and Eleven has the same/very similar power set the Demogorgon has.

Also, Cassidy is arrogant and he is in character in this battle. It is very likely he will get cocky and screw up somewhere and become the Demogorgon's next meal. Hidan (Naruto), who is also immortal, learned that the hard way. Immortality will not protect Cassidy from defeat forever. Plus, he does not have the necessary powerset to defeat the Demogorgon. The Demogorgon was defeated because Eleven ATOMIZED it with her psionic powers and Cassidy does not have psionic powers.
