Power absorption only work on absorbing power from his mecha. He's never use it offensively against anyone. Simon also prefers to actually physically fight things, unlike God Man who just twitches an eyebrow and erases things/turns back time/etc
Also, God Man is about to get Fate Manipulation, Existence Erasure and Biological Manipulation. All of which he can do by twitching his eyebrow, and none of which Simon has ever resisted.
Also, he has precognition, clairvoyance and cosmic awareness, so he knows exactly what Simon is going to do before he does it.
God Man takes this pretty easily.

Biological manipulation isn't really useful for a 2-C. His existence erasure is super small scale. And he can't resist mindhax or time stuff.

Also, you are misinterpreting this. The time travel isn't accidental. Every single time travel was intentional. The joke is that "where does the problem begin?", so it has God Man going back to fix the guy's childhood, then deciding that's not where the problem began and going back to stop his birth, then deciding that's still not where the problem began and eventually going all the way back to the beginning of life.
