Scorpion versus Sub-Zero

It really depends on what Scorpion and what Sub-Zero.

If this is Bi-Han vs Scorpion, Bi-Han defeated Human Scorpion and Wraith Scorpion during his initial span. Scorpion would quickly surpass him as of MK1 (Scorpion gets stronger while the longer he stays in Hell, stated in Deadly Alliance).

If this is Kuai Liang from MK2-4, Scorpion proved himself to be superior to Kuai Liang during MK4 where he beat him.

If this is Kuai Liang after Deadly Alliance, with the Dragon Medallion and his armor, he became tons of times stronger (he could actually face Noob Saibot, of the strongest kombatants who could ONESHOT Goro, even if he was defeated and was one of the only fighters to not be defeated by Taven) and actually killed Scorpion during the Armageddon.

If this is Alternate Universe, everything changes. Both are supposed to be exactly equal at their fullest (as shown during the possessed SZ fight) so it could go either way.
 
Well, I was thinking that they'd both be peak/composite, with Sub-Zero being Kuai Liang, given that Bi Han's seemingly destined to become Noob.

Yeah, Bi Han becomed a Really Bad Noob
 
If peak, then I'd say SZ. Both their peaks are during Armageddon since Scorpion had spent the longest time in hell since his rebirth and SZ was with the Dragon Medallion and his armor, and SZ won, killing Scorpion during the battle.

Noob is a whole another dimension of crazy, dude oneshotted Goro, easily defeats peak SZ twice (once with assist) and never is defeated (only by Taven). Noob might just be the strongest kombatant, even above Liu Kang, but that is up for quite the amount of debate and scaling.
