OK, so Ruby might be in trouble here since Betty has that busted ass Regen, Illusions and her weird ability to learn everything about someone by having Prolonged Eye Contact with them. Her Aura will certainly be helpful in protecting her Betty's Attacks as well as the fact that Ruby is noticeably stronger than her but Betty is really haxxed. That Undertale Soul Manipulation might come in Clutch though, ngl.

Also ruby has a way to kill her (vaporize her with a changed ki beam as we know charged ki attacks are stronger then their normal attacks and she can fly so that helps too) also helps she has the destructo disk that can cut people stronger then the user

I never said she didn't, just that she has annoyingly quick regen, also the Kienzan is kind of a Non-Factor here since Ruby already has the AP Edge by a Pretty Significant Margin.

Here's how I see this playing out, Betty uses her illusions on Ruby to get an opening to read her mind so she can learn what scares Ruby the most and in doing so will learn that Ruby is capable of easily killing her if she puts in any effort at all so she's gonna try to keep Ruby in her Illusions for as long as possible while also trying to destroy her Aura by using her Soul Magic, which will either just destroy the Aura since it's powered by her Soul or maybe even outright kill her since she can Target the Soul directly and stab it with her little Needle Spear thing.
