Yes, the guy requires Force Valor to fight in peak condition, but I don't think there's any evidence he has less stamina than most force users. He sighs at the end of the fight with Dooku, but this could easily be interpreted as him being dissappointed more than anything else. I am a huge Dooku fan, but I'll be real, if Yoda was trying to the point where he could be plausibly fatigued, Dooku would've lost in like, 15-30 seconds. Far too quickly for Yoda to be exhausted.
As for his fight with Sidious, the ROTS Novel (canon to legends) does show that Yoda was exhausted from the fight in the Senate/With The Senate, but this doesn't fit the "Limited, but still substantial, stamina compared to other practitioners of the force due to old age (Requires Force Valor to fight in peak condition)" description. At the end of the fight, Sidious senses that Vader is in "Mortal Danger" and runs "with vigor that surprises even himself". The same Sidious who according to the narrator couldn't possibly be fatigued in his fight with Windu. If anything the fact he tired Sidious out as well as himself is an excellent feat of stamina.
The last thing worth noting is that all force users use the force to fight in peak condition, and are otherwise peak human. So could you even call using the force to fight in peak condition a weakness for a jedi?
