Well, I know that the omnitrix can destroy the universe in a couple of days, but why it is considered low 2-C?

IIRC the OmniTrix doesn't take days to destroy the universe, it takes days for it to build up energy to detonate

Don’t know either, aside from that the universe is a low 2-C construct by definition.
