This one is really straight forward. Darian Quilloy recently made an Instagram post that clarifies how fast Mimics are. Within a 100 meter dash, a full grown Mimic averages 30-35 km/h, while an Elder Mimic surpasses 40 km/h (although they can only gallop in short bursts, compared to an Adult Mimic's long sprint). As such, they should get Athletic Human and at least Peak Human respectively.
That same post also gives us height measurements for Elder Mimics, they are 10ft tall. We already have them at Large Size (Type 0), but now we have added clarification.
