Speed: For supporting evidence of MHS+, Itachi dodged lightning here during his Chunin exams

His opponent’s somnolence had surprised him, so he had lost sight of the
fact that this fight was basically about physical abilities. If he simply
concentrated on his physical abilities, he could easily stand in the same arena
as this boy. He focused all his attention on the enemy before his eyes.
Wobbly Nemui twitched. He was coming.

Vision, hearing, scent, all his senses. He felt Nemui with everything he
had. He caught his aura tracing the wall to his right.
Lightning.
He dodged.
It’s all right ...
So Itachi was better physically superior, after all. Once he knew that, it was
possible to deal with this. With flowing movements, he evaded the attacks
launched from Nemui’s selfless dream state.

Itachi Shinden: Book of Bright Light Chapter 3 Part 1

The only problem with this is that Nemui usually infuses his fist with lightning nature for his attacks, but they didn't mention it here like always so I think its just a lightning bolt

Stamina: Fought Shisui for 6 hours straight as a kid
“Hah!” Expelling a breath full of ambition, Shisui looked at Itachi and
smiled. “Yeah, training with you forces me to really put my back into it.”
Itachi looked at his cheerful friend and felt refreshed in both mind and body, as he stood there drenched in sweat.

They had been sparring seriously for three hours or so, as a way for Itachi
to vent his anger with his assignments. They had already gone fifteen rounds,
with breaks of about three minutes after each one, resulting in six wins for
Itachi and nine for Shisui.

The only rule was no sharingan; everything else was fair game. Sharingan
was off limits because the visual technique used up a large amount of chakra,
and they wanted to spar for as long as possible.
The shuriken they flung at each other clashed in the air, and flew off in
some unexpected direction. Neither Itachi nor Shisui watched to see where
they went. They were already leaping at each other, and closing the distance
between themselves.

“Chi!”
“Hah!”
Their fighting cries blended together.
Their bodies collided in midair, tangled together, and crashed to the
ground.
Shisui got to his feet and in position first, and launched a kick at Itachi,
who was propped up on one knee. Itachi immediately thrust his right arm out
to block it. His field of view shaking with the impact of the kick, he saw his
friend quickly weaving signs.

Adhesive Manipulation: Can use Starch Syrup Capturing Field to release a sticky starch to trap projectiles

Soul Manipulation with Tsukuyomi: Its stated that Itachi destroys the spirit. Here, its stated to destroy the heart and soul.

Animal Manipulation: There's so many characters who should just get this via summoning jutsu, and Itachi can create crows out of nowhere

His substitution technique was unconventional. Normally, the ninja
switched out their own body for a log with a tag attached immediately before
an attack, in order to confuse their opponent. But rather than a log, Itachi’s
version used countless crows.

He had come up with the idea when he was training with Shisui, and saw a
flock of crows flying in the dense woods. If you used the usual log, the
confusion effect on your opponent was meager. But the instant you switched
out for crows, they flew off in all directions, so your opponent was surprised
and bewildered, generating an opening that wasn’t even on the same level as
with the log.

This was the first time he had tested it in an actual fight.
Will it work ... ?

He planned to do it when one of the three thrust a kunai into Itachi’s body

Resistance Negation: Its already accepted that mangekyou sharingan users can use genjutsu on people with baseline resistance to it, but if that's not enough, he sealed away Orochimaru and his soul, and Orochimaru resists that. Not sure if you want to just not count higher potency as resistance negation, but we sometimes do

Instinctive Reactions: His body moved quicker than his thoughts. There is also another time he did this, it was in the same novel when he ran away from Sasuke after Sasuke found him killing his parents, but I forgot to grab the scan so just trust me bro

Yashiro faced Itachi again. “Listen, Itachi,” he said, murderously. “If you
did indeed betray the clan, you will pay.”
Itachi’s body was faster than his voice, faster than his thoughts. He
launched a kick at Yashiro’s throat, caught Inabi in the face with his arm as
he whirled around, and plunged his knee into the pit of Tekka’s stomach. As
he whirled around to face forward again, the three tumbled clumsily to the
ground, and Itachi stood tall in the middle.
“Like I said, don’t judge people by appearances or preconceptions.”
Hit hard in vital points, the three men remained doubled over, unable to
move.

“You misjudge me completely if you think I have patience for you.”
Trembling, Inabi finally just barely managed to lift his head, and glare at
Itachi.

“The clan ... The clan ... ,” Itachi continued. “You babble on, but you
overestimate your abilities. And you have no idea of the depth of mine, which
is why you’re crawling right now.”

On all fours, trying desperately to stand up, Yashiro looked over his
shoulder at Itachi, and spat, “Shisui ... had been watching you
recently ... It’s been six months since you entered the Anbu ... What you’ve
said and done since then is too strange to overlook. What on earth are you
thinking?”

Memory and Emotion Manipulation: The Tsukuyomi can often instantly deprive someone of personality and memory
“Kodaka….originally, this was for killing people…” *

“No way! Without that jutsu, there’s no use for a bastard like you!”

Shortly after that shout, Kiiro’s body rocked and swayed. Even though his consciousness had returned, Tsukiyomi’s mental exhaustion is a cruel, intense thing. The technique ended in a moment yet could often deprive all the personality, all the memories of a person.

“Ki-Kiiro, right now your body isn’t-”

“Don’t touch meee!”

Kodaka tried unexpectedly to support his body, and Kiiro removed his hands.

Resistances:

Survived Sasuke's Great Fireball Technique with small burns. He did take damage, but sasuke's city block calc shows that it can vaporise even the dirt instantly so its really hot

Dodging lightning isn't automatically MHS+. Shit that could be high hypersonic for all we know

You said 6 hours straight when your quote says 3 hours with 3 minute breaks after each.
That means that the total time fought was 180 minutes.
15 x 3 = 45. 45 minutes out, 135 minutes fighting (not straight)

135 / 15 = 9. 9 minute fights with breaks. This wouldn't even be fine for his current profile, as this is his sick profile where he spams the sharingan, while he fought that long above with trying his hardest to preserve his chakra.
This is fine.
Soul Manipulation with Tsukuyomi: Its stated that Itachi destroys the spirit. Here, its stated to destroy the heart and soul.
Spirit ≠ Soul, it can mean mind as well, shown as the victims of Tsukuyomi's minds were broken.
And Heart and Soul is metaphorical, since Itachi isn't destroying the hearts of his victims now is he?

That's just more potent soul manip, not resistance negation.
Resistance negation is disabling their resistance. He doesn't disable resistances.

Without visuals, we can't actually know if this feat is MHS+. You could be Supersonic and still dodge lightning, depending on the distance and the time you have to react.
At best, it could be a minor support for a pre-existing MHS+ rating, but I'm not sure if it qualifies for that.

I mean, the statement only says they fought for 3 hours, and they had significant breaks in-between. I don't this is even Peak Human stamina.
This is fine.
Soul Manipulation with Tsukuyomi: Its stated that Itachi destroys the spirit. Here, its stated to destroy the heart and soul.
No. In the DB scan you linked, it literally gives extra context if you keep reading. It says that the damage incurred is purely mental, and is due to the mental torture inflicted by Tsukuyomi. "Spirit and Soul" are purely metaphorical here.

Namely, this means inside the genjutsu, the physical world’s common sense is completely irrelevant and opposing the caster is impossible. Somebody caught into the Tsukuyomi find themselves into a strange world of infinity, their fate entirely lying inside the caster’s hands. Some time, they will undergo the torments of Hell, and some other time, they will be repeatedly shown a horrendous, hellish picture of agony and mayhem, with no idea of when either of those will end. As a result, the poor prisoner can only wait until the collapse of their psyches…!! Even a body made of iron or the speed of light are powerless before this jutsu, which is the reason why it is feared as the most powerful.
Since attacks in the spiritual realm have no power to physically wound or kill, it bestows an unfathomable amount of mental damage.
So yeah, NO.
Animal Manipulation: There's so many characters who should just get this via summoning jutsu, and Itachi can create crows out of nowhere

Nah, this is just higher potency. You need to actually negate a resistance or blatantly cancel it out for it to be considered RN.

No, he's not directly manipulating memories or emotions here. This is just a side effect of the mental trauma, which is actually a thing IRL. Some people get so traumatized that they literally lose themselves, and mentally break. This is the whole point of Tsukuyomi: putting the victim through a custom made hell and torture that can literally last a life-time if Itachi wishes.

No, he just tanked it. Remember, Katons have AP and force, too. But it's not like he wasn't burned by it. The Katon barely grazed him, and he still suffered burns.

Yes in terms of heat resistance
I'm gonna be honest with you, I'm not very adept at the whole AP/Dura vs Heat Resistance topic unless it's very blatant. The wiki itself seems to flip flop on the matter every now and then. So I can't conclusively rule in favor of this, or against it.
So you should get more staff members' opinions on this specific point.
Personally though, I'm not convinced yet.

That was really just durability

A fire touching you for less than a second and not completely scalding you isn't grounds for heat resistance.

A human being can stay on fire for like half a minute up to a few minutes until they burn to death. With the speed these characters fight at, that scene probably wasn't even a second.

Doesn't seem like grounds for a resistance

This is not regular fire though, this is the same fire that had enough heat energy to create a cumiuenbuosl cloud, vaporise the ground, and while weaker could instantly burn Orochimaru's face. It instantly vaporised the ground, while it didn't even char Itachi's arm

Plus fire release users can withstand their own fire when they breathe it, I don't remember a time when the fire was too hot for their mouth

You didn’t change anything with that. All you did was give the fire feats.

It barely touched Itachi.

As for breathing it, no. It hasn’t been shown like water style to flow out of the mouth, it just appears outside of the mouth like Hiruzen’s Justus, or unless you wanna say Hiruzen spits rocks from his throat

It also barely touched the ground and when a lot weaker took just a few seconds to burn orochimaru

Yeah Hiruzen spits rocks from his mouth
