One day, Eddy went to buy a bunch of jawbreakers, but on his way to the convenience store, he spotted a $1 bill on the ground...at the same time Mr. Krabs saw it. Double D suggests they should take half of the amount, but they refuse and decide to fight each other for the dollar instead.

I believe eddy can take this due to how smart he is

often eddy has shown the capability of outwitting his opponents while krabs is more of a brute in physical confrontations and thanks to his equipment he can really take advantage of this with the stinkbomb he can stun krabs which would allow him to get in some good hits on him as well as the hypnotism wheel to put in a major disadvantage state

there's also the range tho yoyo gives him and the general elasticity of his limbs should give eddy this win

Yeah, no. For how smart Eddy is he consistently gets his ass handed to him by pretty much everyone and has no way to kill or incap Mr. Krabs while he can very much be knocked out through his regen especially considering the massive AP advantage Krabs has. (0.035 tons vs 0.22 tons)

To be fair in regards to Eddy getting his ass handed to him throughout the series, Eddy actually has fought people, including those who'd normally kick his ass, like Sarah, Marie, and Jonny's superhero form, Captain Melonhead.

Eddy does have a chance of incapping with his Hypnotizing Wheel, which isn't OOC for him or anything. Btw, as for Krabs' regen, Eddy has Low-High.

And how often has Eddie been knocked out and Incapped through his Low-High again? This is inches away from a stomp cause Eddie has no real advantages
