Do any characters exist that are explicitly defined as being of cardinality > Beth_1?

I assume most fictional characters who are considered to have that nature are only assumed to have it based on some assumptions about what the author meant in their character description. Either that, or it's the best way to explain things that happen in universe.

Question part two: how about characters explicitly defined to have the cardinality of a Beth number indexed with some transfinite ordinal?

I don't think any characters directly scale to Beth Numbers on the wiki. It's not that they aren't brought up, but rather most characters in verses that do mention them, scale above them, not directly to them.
