Um.... why is this a fight again? A middle-aged deformed man vs a LITERAL BEAST in the prime of his life, with more strength, speed and agility than any man. Beast held his own against Gaston, who is much more of a formidiable foe than Quasimodo. Beast stomps.

Beast has claws and teeth and can fight hoardes of wolves, which I doubt even an angry Quasimodo could do. He wins low diff.
