Zeb is strong but he has no feats above Class KJ. Chewbacca has low end Class MJ striking power and has far better durability and endurance feats. If it comes down to hand to hand combat, Chewie would beat the hell out of Zeb. The only stat where Zeb seems to have an advantage is in terms of speed & agility. If he can dodge Chewbacca's assaults quickly enough, he could somehow place himself well enough to get off a good shot from his own blaster. The deciding factor of this fight would be the environment. If it takes place in an area where Zeb can jump around and hide, then there is a chance he could win. But if it's in the open, Chewie wins.
