Which version of Alex is this? Prototype 1 version? Prototype 2 version?
If it's the latter, Alex wins via Infected Creator, especially due to Kaneki not having any resistance to diseases and Biological Manipulation, based from what I've seen on his profile.
If it's the former, Alex wins ultimately due to his biological absorption, where Kaneki hasn't shown resistance to Biological Manipulation, based from what I've seen on his profile again.

Dunno if you would consider it resistance, but Kaneki had his entire body absorbed into a giant kagune monstrosity and reconstructed entirely out of rc cells, essentially turning his entire body into a kagune.
